Remove poetry lock

Background info:

• Remove stale poetry.lock, re-added by mistake in the merge of Change sparse matrix to array #96; the project has used uv
• Bump version to 0.8.0
• Bump nltk to 3.10.3

Changes introduced:

• Update the version in pyproject.toml, uv.lock and CITATION.cff, and set date-released
