refactor: move pcb files into versioned subfolders - #95

this reorganizes the PCB folders into major version subfolders.
The stackup-check job still read PCB/stackup/board.kdl, so it failed after the move. CI, the path-building scripts (stackup_parts, set_3d_models, build_placeholder_3d_models), CLAUDE.md, and the docs and source comments now use PCB/v1.x. Each footprint's Stackup Source field records the KDL path, so the PCB is re-synced; only those 82 fields change. The .gitignore rules for KiCad files were anchored at PCB/, so after the move they no longer applied: the PR dropped the tracked BOM CSV (production/bom/snips_controller-bom.csv) and committed .kicad_prl files, two unsaved-export temp files and production/misc reports. The rules now use PCB/**/, the BOM CSV is tracked again, and those local files are untracked again but left on disk. Co-Authored-By: Claude Opus 5.5 <[email protected]>
