This pull request updates the project to use Go 1.27.0 and refreshes several dependencies to their latest versions. The changes ensure the development environment, CI workflows, and Docker builds are all aligned with the new Go version, and also include minor dependency cleanups and upgrades for improved stability and compatibility.
