Pushing a v* tag now builds the CLI for Linux (x86_64, aarch64), macOS (Intel, Apple Silicon) and Windows, smoke-tests --version and attaches the archives with SHA-256 files to the GitHub release. install.sh and install.ps1 download the archive for the current machine and verify its checksum. Adds --version / -V (used by the release smoke test and the installer). Bumps the patch version, moves Unreleased into the new CHANGELOG section and adds a "Try the released CLI" section to the quick start.

Checked locally: fmt, clippy -D warnings, cargo test (55 passed), release build prints the new version. The same workflow is being proven first on repository-intelligence v0.1.1.
