fix(deploy): remove untracked files before checkout to unblock production deploys

The "Deploy to vps01 through IONOS" job was failing because the server's working directory had accumulated untracked files (e.g. session.txt, sound.txt, model files, static assets), causing git checkout main to abort.

Change

Added git clean -fd after git fetch and before git checkout in the VPS01 deploy script to clear untracked files/directories. -x is intentionally omitted to preserve .gitignore-d files (e.g. .env, runtime configs) on the server.
