Summary

• Adds a Preferences > Interface > UI Theme choice: Black (default, unchanged), Mid Gray (anchored to the "Mid Gray" canvas background swatch) and Light Gray (a photographic middle gray). The names match the canvas background swatches.
• Every background/border surface is re-tinted with the same relative offset so the panel/card/header depth hierarchy is preserved; secondary/hint/unit text goes white under Light Gray since the original grays lose contrast on that lighter surface (disabled/muted text is left alone, since it's documented as deliberately low-contrast).
• The translucent washes (header_veil, surface_overlay and their hover tokens) get their own overrides, so card headers over charts and canvas overlays follow the chosen theme too.
• Like UI scale, switching takes effect after a restart (the stylesheet and icons are baked at startup); THEME is patched in place from the saved ui_theme setting before the stylesheet loads.

Test plan

• make lint, make type and the theme, preferences, token and translation tests pass
• Visual check of all three themes in the running app after the rebase

Hi Marcin, I added the grey themes since many people including me have problems with dark black software.
The theme can then be chosen in the settings.
