I had to update the Janus version in both Cargo dependencies and Docker image tags for this to work, to pick up X-Wing support there. |

This changes the CLI's default KEM when creating a new collector credential from X25519 to X-Wing. I tested this locally against a docker compose deployment and it worked as expected.
