Upgrade the codebase to the latest version

At the moment the bot uses dependencies roughly from 2023.
These dependencies must be updated to their current state.

While fixing the packages and therefore the codebasis the respective pull requests will be linked and can be tracked via this issue.

Once all dependencies have been update the next major version will be released

chart.js-image is apparently unmaintained at the moment and contains a critical node-fetch vulnerability. However we are using it to only generate an image locally without fetching an image from the outside so we should be fine. This module will be switched out in the future for a maintained alternative
