docs(system-tables): survey candidates S5-S14 and settle S2's row shape - #82

S2 sockets() gains its two up-front decisions: one row per (socket, pid) with a NULL-pid row when none is visible, and NULL remote/state for UDP. New open candidates, mostly from sysinfo which is already a dependency: disks(), system(), network_interfaces(), files(path), env(), cpus(). Suggested order after S2 is disks + system together. Recorded as not doing, each for breaking the same-columns-and-rows rule: open files per process, services, temperatures, event logs / scheduled tasks.
