feat: add EntityLinkage coverage integration example

Summary

• Add a complete synthetic EntityLinkage-to-EvidenceMatrix example, including resolved, ambiguous, and unresolved records, an adapter, and coverage output.
• Include the example in source distributions and exercise it in CI using the built wheel and the published EntityLinkage 0.1.0 package.
• Bump EvidenceMatrix to 0.1.1 so the released package and install instructions include the example.

The PR CI runs the Python 3.11–3.13 checks and the packaged integration flow.
