Subject: [PATCH] chore: release 1.0.0

The first published version of kaitencloud is 1.0.0: the SDK is complete
against its contract and its public API is the one it commits to.

- src/kaitencloud/_version.py: 1.0.0, which the release workflow checks
  the v1.0.0 tag against.
- CHANGELOG.md: the section is dated 2026-10-01 and links to the v1.0.0
  release. Its preamble, and the README's Versioning section, state the
  post-1.0 rule: only a major version changes the public API.
- pyproject.toml: Development Status :: 5 - Production/Stable.
